If you're looking for a creative dessert for your family or friends (or what the Simpsons would refer to as a "tasty fake"), this dessert recipe is perfect for you. It's simple and surprisingly quick. It can also be served warm or chilled to your liking.
1 (8-oz.) package non-fat cream cheese, at room temperature
1/4 cup non-fat Greek yogurt with strawberries
1 tablespoon plus 1/4 cup sugar, divided
1 teaspoon vanilla extract
1/2 teaspoon fresh lemon zest
6 (8-inch) soft flour tortillas
1 tablespoon cinnamon
vegetable oil, for frying
toothpicks; stand mixer (or hand mixer); deep skillet (or deep fryer, if you're cool), paper towel
Put your cream cheese, lemon zest, yogurt (with strawberries), vanilla and tablespoon sugar in bowl of your stand mixer (or mixing bowl if using a hand mixer). Using the paddle head, beat the ingredients until thick and smooth. (Do the same with the hand mixer).
Lay out your tortillas and spread the mixture amongst them on the lower portion of each flat. Fold the left and right sides inward and roll the mixture-smeared side up like a chimichanga and secure the fold with a toothpick.
Throw the rest of the sugar and cinnamon on a plate (or better, a rectangle piece of tupperware) and mix it up.
Fill a deep skillet with veggie oil (NOT olive oil) or your deep fryer and heat to 350°. Fry those suckers 2 or 3 at a time and remove when golden and let 'em drip for a sec on the paper towels. Roll them around in the sugar and cinnamon to cover them. Plate and eat.
You can serve these warm like you would a "real" chimichanga (they are nice and gooey) -OR- chill 'em. I really preferred them chilled, but it's your call!
