2 3/4 cups all-purpose flour
1/2 cup cake flour
1 tablespoon baking powder
1 teaspoon salt
8 ounces (2 sticks) unsalted butter, softened
2 1/4 cups sugar
3 large eggs
1 large egg white
1 cup whole milk
1 1/2 teaspoons pure vanilla extract
2 cups finely chopped strawberries
+ strawberry cake box mix
(and eggs and veg oil)
+red food coloring
fresh strawberries chopped
Decorator Frosting Leaves:
1 stick butter
1/4 cup shortening
1 teaspoon vanilla extract almond extract
1/8 teaspoon salt
4 cups powdered sugar
4 tablespoons milk or water
+ green food coloring
+ packaged squeeze tube of green frosting
Follow the directions of the box mix to make 24 mini-cupcakes. Allow to cool. Cut the top of the cupcake off and set aside.
Mix the strawberries and Cool-Whip together. Smear the top of the bottom half of the cupcake with the whipped mixture. Replace the top of the cupcake.
Use your squeezy tube thing of frosting and make triangles (3 or 4) starting from the center. If advanced or more artistic, fashion some sick leaves on there and use a toothpick to give details. Lance the center though the whole cupcake with the toothpick to hold it together.
I cheated as much as I could here. I meant to make this from scratch but I chose to go with a box mix. I also didn't want to make the effort for my own, from scratch frosting.
This was part awesome and part "eh". Cool idea that should not be rushed. I made some other things and was zipping around
